Cool for School {Easylunchboxes Giveaway}

If you poke around this blog at all it won’t take you very long to figure out that Easylunchboxes are one of my absolute favorite containers. I use them regularly and I personally own 12 containers (3 sets) which are actually mine and were not provided for review (so no disclaimer at the bottom of the post)! I also own a cooler and a set of mini dippers. I’m a definite fan. Actually to be perfectly upfront it is the very container that was the inspiration for changing the way that I pack lunch (iPackLunch get it lol?)! Before I found the Easylunchboxes gallery I was guilty of low nutrition, high waste lunches and well, frequent lunch time meals from the dollar menu. You know what I mean! I thought I didn’t have time for anything else. These containers changed all that for me!

There is a reason after all that these are the #1 best-selling lunchboxes on!

With back to school days on the very short horizon I’d highly recommend picking up a set of these in classics or brights to be ready for school lunch packing! Why this container for back to school?

This container is a great size for holding all the lunch. No disposable baggies or individual packages required! That = cost effective and eco-friendly! Not to mention no extra packages for kiddos to have to open!

That brings me to the next point, these are easy to open for all ages! The trade off is that they are not leak proof. This is not a huge issue as sauces, dips etc can be packaged in a smaller, leak tight container and carried in the same cooler.

You can portion the food for proper or desired nutritional intake! (low calorie or correct amounts of protein/grain/produce etc)

The smaller compartments can be used to separate food for snack breaks versus food for lunch time.

The compartments allow food to stay separate for those picky eaters who don’t like their food to touch!

The containers are a great value. At $13.95 for a set of 4 that means each container is less than $3.50!

The cooler bag is great for all ages too! It can be jazzed up for smaller kids or used plain for older kids for whom the non embarrassment factor is important.

The cooler bag also allows the food to be carried flat which insures food will stay as you packed it!

Now let’s talk lunch…

Lunch#1 (pictured at top) – Caprese BLT sandwich (my recipe is featured over at Spryliving), sweet potato tortilla chips, apple slices, celery and a peanut butter greek yogurt fruit dip.

Lunch #2 (pictured above) – Pillsbury Pizza Scrolls (my instructions below), mango, snow peas and raw carrot chips.


Pillsbury Pizza Scroll Instructions

  • Roll out one can of Pillsbury Crescent rolls (rolls out as a rectangle shape, do not break at perforations)
  • Using a pastry brush spread on a thin layer of your favorite pizza sauce (consider putting pureed veggies in your sauce for extra nutrition)
  • With the long sides of the rectangle top and bottom in front of you (shorter sides right and left) sprinkle on grated mozzarella cheese. (You will roll the scrolls from the side closest to you, the filling will spread upward as you roll so you can skip sprinkling the cheese a couple inches from the top edge)
  • Layer on your pepperoni (turkey pepperoni used here) also skipping the last couple inches at the top
  • Starting at the long edge closest to you, roll the rectangle upward jelly roll style, the filling will spread upwards as you do. Do your best to keep the roll tight.
  • Cut your roll in 1 to 1-1/2 inch segments and place on a lightly greased cookie sheet
  • Bake at 375 degrees for 10-14 minutes (keep an eye on the bottoms of the rolls) until the rolls have puffed up and begun browning
  • You can include extra pizza sauce for dipping

Officially summer is more then half over and we have all begun to turn our attention to the back to school season. For some of us this could not come soon enough! For others it just seems a little TOO soon! Whatever school of thought you are in there is no denying school will be in session soon! We all had better hit the stores!

Gluten-Free Friday & snackTaxi Giveaway!

After a week off for the Thanksgiving holiday, Gluten-Free Friday is back! I always like to mention that no member of my family is Gluten-Free although we have many wonderful friends who are! For them and for you I do my best to provide GF lunch ideas! Gluten-Free Friday is brought to you at the request of my friends at House-54!

With the weather turning colder in my neck of the woods I decided it was time to turn to some hot lunch options.  In my house the crockpot is already in active use slow cooking up stews, soups and of course chili. I make chili at least once or twice a month in the fall and winter seasons and always have a stock in my freezer. It is such a great comfort food and certainly makes for a hearty lunch on these colder days. To serve in lunch I simply heat my chili to a very hot temperature. While I am heating up I also prime my thermal container with hot tap water. This will warm the metal up and avoid a big cool down of your food which can happen when you add hot food to a cold metal container. Simply empty the water, add your chili and seal. Serve with your favorite gluten-free snack such us tortilla chips.

 Deb’s Simple Crockpot Chili…
2 lbs ground beef cooked and drained
1 can drained black beans (look for gluten-free marked on the can)
1 can drained dark red kidney beans (look for gluten-free marked on the can)
1 28 oz can diced tomatoes
1 15 oz can tomato sauce
1 onion chopped
1 green pepper chopped
1 red pepper chopped
2 garlic cloves chopped
4-5 tbsp chili powder
1 tbsp cumin
1 tbsp oregano
1 tbsp corn starch
1 pinch of red pepper flakes
salt & pepper

Cook on high for 3-4 hours. I have a BIG family so my recipe makes a lot so be prepared to freeze some!
