Gourmet Gluten-Free Lunch for Work

Since my Lunchbots Cinco arrived I have been spoiling myself with fancy lunches! Now I’m not going to lie, clearly I enjoy packing lunch so “fancy” isn’t really a stretch for me! To be perfectly honest I find preparing food quite relaxing and it doesn’t take much to get me to kick it up a notch! It is a great creative distraction that gives me instant gratification.

Today’s gluten-free lunch contains:

  • A salad of steamed asparagus, strawberries and feta cheese
  • Orange and pink grapefruit wedges halved
  • Celebration Medley Trail Mix by Second Nature (view allergen policies here)
  • Perdue Honey Roasted Chicken Shortcuts
  • Salad dressing pictured in Lunchbots Dips Condiment Container (chose your favorite)

Executive Gourmet Lunch

Somewhere around age 20 or so I got my first “professional” job. I began working as a receptionist and have worked since then throughout administration, finance, customer service, sales and marketing. For the past 7 plus years I have been employed as a Sales & Marketing Specialist for the same corporation. In all this time, I have come to realize as so many ensconced in Corporate America have, that the concept of a lunch “hour” is mostly fictional.

Often times when you are part of a scaled down staff, pressed with a heavy workload and tight deadlines you are truly lucky to even get a 15 minute “mental break” at your desk. The reality is often you end up eating and working because you feel obligated and pressured to do so. This is the expectation of the salaried employee after all, right? We can all only hope that we are doing what we love on our quest for that regular paycheck! I look around my cubicle city every day and know I am not alone! :) How about you?

That is of course, you eat and work if you were smart enough to bring your lunch! So yes, this is the way it is, even for me. I admit I slow down a bit and perhaps have a little less focus while I eat but I keep going!

Type, type, bite, type, type, bite!

It helps to have really great food in times like these. A lunch that is easy to eat and packed with nutrition to keep you going and make you feel like a company executive whether you are or not! A lunch that will almost make you feel like you did have a lunch “hour”! OK maybe that is a stretch but I guarantee you will feel better after you have a proper lunch!

I have nicknamed my lunch featured in this post the “Executive Lunchbox”. Packed in my beautiful stainless steel Lunchbots Trio like a gourmet, catered meal ordered in.

This lunchbox is full of variety and contains:

  • 3 Veggie dumplings purchased in the sushi department of my local grocer.
  • Sugar snap peas
  • Colby Jack and Wisconsin Cheddar cheese along with veggie crackers
  • Kiwi, sliced nectarine and 1 whole strawberry
  • Served with low sodium soy sauce on the side

Say Cheese! Cheeseburger Pizza for lunch!

My family loves pizza and I love the challenge of coming up with different kinds of pizza! I make it a personal mission to come up with new, easy, fun and yummy family meals. I also work full time in Sales & Marketing and have 4 active children. My time is short and my energy level low at the end of the day so fast is a must! We all know once the snack cabinet is open while waiting for food, appetites for dinner will diminish!

I had this idea for a simple cheeseburger “stir fry” and it just evolved into pizza!

“Cheeseburger stir fry”
Spray your heated pan with cooking spray. Cook 1/4 cup of diced onions until translucent then add one pound of ground beef. Cook/scramble beef thoroughly draining off the grease when done. While mixture is hot stir  in 3-5 tablespoons of ketchup and 1-2 tablespoons of dijon mustard. Taste the mixture and adjust to suite your taste.

Spread the cheeseburger mixture on your favorite pizza crust. I topped with american cheese but use whatever you like on your cheeseburger! You could also add cooked bacon (but I did not) for a bacon cheeseburger variety. Cook until crust is cooked/heated and the cheese is melted. Remove from oven and add your favorite cheeseburger toppings such as pickles, lettuce, tomatoes, ketchup, mustard etc.

For a gluten-free version for my son I simply skipped the crust and stirred the cheese into the mixture. I served it to him as the original “stir fry” mixture I envisioned.


For lunch I packed a slice in my Easylunchboxes container and included:
