Do you have one of those little gourmet sandwich shops that your office frequents? You know the quaintly decorated shops with unique gourmet sandwiches wrapped in paper, spectacular soups, an interesting display of chips (maybe even homemade) and the pickle (oh the pickle)… you do, right? How much does that lunch cost you? Perhaps $8, $10 maybe even $12 by the time you throw in one of those expensive drinks? You really are paying for that atmosphere, aren’t you? You could totally do that quickly and easily at home! You really can! Although I support an occasional visit to your favorite local shop!

When I planned my menu for the week I decided to make a pesto chicken pizza for dinner one evening. I knew I could borrow some pesto sauce to make these sandwiches! In this case I purchased the pesto at my local grocer but if you make pesto homemade all the better! Check out this Broccoli Pesto Recipe by Momables! My grilled cheese features sliced mozzarella cheese, pesto sauce and sliced tomatoes grilled on whole grain bread. I had no leftovers for lunch and whipped up 2 of these sandwiches for my husband and I to bring to work for lunch today in less than 10 minutes! Now I admit I skipped out on the paper and the pickle today but this is one very easy, very do-able, work lunch that I promise will feel just like you ordered from the expensive sandwich shop – chips optional! This lunch also works very nicely on gluten-free bread!.

This lunch is packed in an Easylunchboxes container and also includes fresh blueberries and raw carrot and cucumber “fries” which were cut with a crinkle cutter.

    Do you have a way to heat this up at work, or did you just eat it cold?

      Hi Jen. I actually do have a microwave at my office but this is fine to eat cold. Alternatively consider mixing mayo with pesto and serve on an ungrilled sandwich! :( Thanks so much for reading!
