Hi-Ho Off to Work I go… With Lunch!
Packing my lunch has become part of my morning ritual. It is part of what I do to get ready to leave the house each day for work. I wake children, I pack bags, dress children etc and I pack lunch. My husband even is sure to ask each morning where his lunchbox is. We both feel pretty good knowing we are saving money and eating better. I also know if I bring lunch to work this spares me some time to run errands or even go for a walk or jog. What do you do on your lunch hour?
I often incorporate leftovers in my lunchbox and at this time of year it is pretty common to make lots of cold side dishes to accompany grilled food. In this heat who wants to cook inside? Pasta salads, sliced fruit, potato salads, olives, crudite platters, cole slaw etc are making their appearance at BBQ dinners everywhere! These cold sides work real well in your lunchbox! Today’s featured lunch (shown in Easylunchboxes container) started as side dishes to a grilled dinner: Caprese salad made with heirloom tomatoes transforms to a main dish by adding in some chicken strips. Balsamic dressing is served in the small container (don’t worry I put a lid on that mini dipper container). Cherry berry fruit salad (also from dinner) and edamame crackers round out this light lunch…simple summer fare! This lunch was super fast to make and fresh!
So this long holiday weekend surely will see many a BBQ. Don’t forget to save some for your lunchbox! Happy 4th of July all!
