Round-up of Grown-up Lunches
Traveling down the highway of life I sometimes feel like I am stuck in traffic! There are too many distractions, too many cars crowding the road and just when I think it can’t get any worse I miss the exit! That is the way this crazy life of mine feels lately. Then Spring brings along baseball season for my oldest son, the nearing of the end of the school year, not to mention many many doctor appointments and all when my work is almost all I can manage! All of this is just highlighting to me how important it is to take care of myself. Like many people I sure would like to be slimmer but more importantly I would like to be healthier. I would like to have the stamina and energy to handle all that comes my way! I know that no matter how seemingly convenient that fast food is, it is not the way to go. It is not going to give me the fuel and nutrition I need!
I know that by packing my lunch I will make better choices. I know I will consume more fruits and vegetables! I know that I will eat less overall. I know I will skip the sugary drink! I know it will free up time to take a walk! I know I will spend less! I know all of this so more often then not I do pack lunch! Hey I even think I manage a fairly good variety! To that end here is a round-up of some of my recent lunches!
Lunch #1 (pictured above): A salad of spinach, strawberries, cucumbers, chicken and feta cheese was served with an all natural poppyseed dressing (not pictured). Alongside is one nectarine cut up and 20 snap pea crisps. This lunch is definitely on the lighter side and I would recommend adding additional chicken and maybe some almonds if you have a heavier appetite!
BONUS: I used the cucumber scraps I made cutting cucumber stars for my children’s lunches in this salad.
Lunch #2 (pictured above): Flat Out Bread is coated with Laughing Cow Garlic & Herb Cheese and then rolled with turkey and lettuce. The wrap is served with raw carrot chips, pumpkin seeds and Lemon Meringue Waffles by Naturebox (not an affiliate link).
Lunch #3 (pictured above): Leftover tortellini with turkey sausage crumble is served with cucumbers and Kashi Garlic Pesto Crackers. A Laughing Cow Garlic and Herb Cheese was packed as a cracker spread.
