Elmo Love for Toddler Lunch

It has been awhile since I have been able to sit and write a blog post. I’ve really missed it and it feels good to be back. You see on February 7th I had to rush my youngest child, 22 month old Evan, to the hospital. We were sent by the pediatrician after she confirmed that Evan was indeed wheezing and treatment in the pediatrician’s office failed to work. Evan seemed to get progressively worse as we moved from his doctor’s office towards the hospital and upon arrival we learned his fever had climbed to 105 degrees and his oxygen levels well under where they should be. Of all the tests that were run in the Emergency Room it was the x-rays that finally confirmed the problem, Evan had Pneumonia. This earned us a 5 day, 4 night stay in the pediatric ward. Not exactly a vacation stay! Finally now we are home, Evan is recuperating and life is slowly returning to our normal routine.


While I was away I missed the other three children terribly. When you are in the hospital for an emergency like that it consumes all your time, thought and energy. All you can do is pray that everything else stays together and rely on your family and friends for support! I felt so guilty being away from my other babies! My fabulous teenage daughter was such a tremendous help though watching her other 2 brothers while Dad and I dealt with Evan. The three of them all deserve some extra special attention that I will gladly hand out! For starters I made my 3 year old, Trevor, an extra special lunch. I showed him some extra love with an Elmo themed lunch! A friend was kind enough to send me her Elmo sandwich press which she no longer needed, it arrived the day we came home from the hospital. I put it right to use the next day!

Trevor’s Elmo lunch is served in a Lunchbots Duo container and contains:

  • 2 small square Elmo sandwiches
  • Annie’s Party Snack Mix
  • Cucumbers cut into heart shapes with a mini cookie cutter
  • a cheese stick quartered with an Elmo party ring tucked in
  • Fresh blueberries
  • 2 strawberry hearts (also cut into hearts with the cutter)


All in all it is a great color combination of fresh produce. The 2 smiling sandwiches really stand out and made this a super fun lunch. The heart shapes were simply added since Valentine’s Day is this week and I think it complimented the lunch really well! Trevor was very excited and was checking it all out while I took my photograph. He asked “is that my lunch?” “It’s Elmo!” “Mmmm Mmmm it smell delicious!” I was glad he was so excited about it and that evening when he came home he asked to watch Elmo. I have a feeling he’ll be requesting another Elmo lunch soon!
