With Love From Me to You…

Today is Halloween but no, I am not showing any Halloween lunches today! Sorry!

You see due to Halloween day festivities I did not have to pack as many lunches as I normally would! My two youngest boys, Trevor and Evan, are having parties at daycare and my office is throwing an Oktoberfest shindig so no lunch needed for me! I did have to pack for Brendan and my husband so I pulled out my containers to throw together some quick lunches for them with no theme in mind, actually no nothing in mind. I just set out to pack food ha!

For my husband I started with more of a “use up my produce salad” approach. I pulled out and starting throwing in baby spinach, carrot chips, chopped green beans, red peppers and cucumbers. As I sliced the cucumbers I thought “hmmm I could just cut a little message in here so easily”… so I pulled out my mini cookie cutters and did just that. A simple little love note cut into the cucumbers and placed on top of the salad. If I had known I was going to have this thought I would have cut hearts out of the red peppers! ;)

I then added a clementine orange, basil parmesan vinaigrette dressing. cheddar bunnies, cinnamon flaxseed coated walnuts and a couple of Blueberry Almond Bites by Naturebox. This lunch is served in an Easy Lunch Box container (see product link at bottom of post).

Since I was toasting some thin bagels for breakfast I grabbed one to make Brendan’s sandwich today. A simple peanut butter smeared bagel cut into quarters. The little “bite sized” bagel sandwiches inspired this snacky lunch! One handful of Naturebox’s Antioxidant Boost was mixed with the same snacks I added for my husband, the cheddar bunnies and cinnamon flaxseed coated walnuts. I then made pineapple and grape kabobs and added some carrot chips. I also sent a Chobani Champions Greek Yogurt for Brendan’s snack time. Brendan’s lunch is served in a Lunchbots Trio, his favorite container.

White Chocolate Pumpkin Popcorn!

I made pumpkin popcorn many weeks ago as the Fall spirit starting to set in. When it was complete I couldn’t help but think it still needed something more, that it still needed tweaking. I knew I would spend more time on this recipe when I had some time! Honestly there are probably many things you can do with the basic pumpkin popcorn recipe but I know one of MY favorite seasonal treats to make is chocolate popcorn. Yes, this recipe would be perfect for that! That is what I did, WHITE chocolate in fact!

So here is the recipe:

Pumpkin Coating Mix (Combine all ingredients lised below in a bowl until well incorporated):

  • 3 tablespoons Pumpkin Powder (not pie spice – purchase online if not available in available in your local stores – see product link at bottom of post)
  • 3 tablespoons Brown Sugar
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Allspice
  • 1/4 teaspoon Nutmeg (I grated my own)

You will also need:

  • 1 XL Bag of buttered popcorn.
  • 1 cup of white chocolate chips for the second part of this recipe!

Pop the XL bag of buttered microwave popcorn as directed on the package (you can use a regular sized bag but you will have lots of excess coating mix fall to the bottom). While the popcorn is still hot, open the bag and dump the pumpkin coating mixture (prepared as instructed above) in. Hold the bag shut carefully and shake to coat the popcorn with the mixture. It is important that the popcorn is hot so the coating will stick. Allow the popcorn to cool. You have pumpkin popcorn! Yum!

Now for the white chocolate!

Spread your popcorn out in a single layer on cookie sheets lined with parchment paper. Melt one cup of white chocolate chips in the microwave as instructed on the package. When the chocolate is well melted use a fork to drizzle the white chocolate over the popcorn generously. Place your cookie sheets in the refrigerator for several minutes so that the chocolate will harden. Your popcorn is ready for eating!

Bring your popcorn back to room temperature and store in an airtight container! Enjoy!

Sorry, no lunches today! The children are on a brief hiatus from school due to the effects of Hurricane Sandy. Don’t worry, lunches will be back soon!

Another Simple & Quick Lunch!

I’m a real life working mom, feeding my real life large family! Being able to pack a lunch quickly is essential to me! When I have time I go a little crazy with details because I enjoy it, when I don’t have time… quick and simple it is! I personally think it takes just as much skill to pack! ;)

Today’s featured lunch is packed in the Easy Lunch Box and includes:

  • 1/2 Tuna sandwich (I packed 2 of these so made 1 whole sandwich) with spinach on wheat swirled bread
  • 1 KIND Snacks bar
  • 1 Clementine Orange
  • Assortment of Late July Chips
